Your cabin temp sensor might be bad or dirty. I'm not sure where it's located, but that sensor tends to get gummed up with particles from the air which insulate it and make it less sensitive on most cars with automatic climate control. If you figure out where it is a lot of times you might be able to fix it with some compressed air for cleaning.
