At least for use on track, I set tire pressures based on the tires optimal hot pressures.
For the Michelin PSS, this is between 37-39 psi. Since I pick up 8-9 psi on track, I start with cold temps around 28.5 psi and check tires' hot temps immediately upon coming off the track.
For use on the street, I generally set the tires at around 32 psi.
