As for the rim sealants, I guess if I can get a paint sealant which will work on the rims without having to get a separate product that would be preferable. Is there any real reason why a paint specific sealant won't work on rims?

sure thing the wheels will run much hotter so the wheel sealants/coatings will have a higher resistant towards heat and be more durable. that being said the coatings on wheels will typically not look as good as the ones for paint.
