I drained and filled my coolant a couple of weeks ago on my manual 128i. I bought two gallons of BMW coolant (and two gallons of distilled water) and I didn't use it all. If I recall, I used all of one jug of coolant, and needed a bit more from the second.
I would buy two jugs of the coolant though so you've got enough to keep the proper mix ratio, and have some on hand for topping up the coolant.
If following the BMW procedure, there is still a little bit of coolant left in the system when you drain it. This may not be a bad thing though as supposedly you should not let the water pump dry out.
Should be noted that you also need to premix the coolant and water before adding it, straight coolant is supposedly bad for the electric water pump.
