1. Selecting AUTO engages the compressor at temps above freezing.
2. Simply pushing the A/C button will turn off the compressor.
3. When the car is shut down in AUTO mode with A/C shut off, it will restart the same way and you won't have to push the button.
It is what it is.
My 128i and 328i both use approximately 5~10% more fuel when running A/C so I turn it off unless cooling or defogging is required.
