Obviously, Ford, Mazda, etc. are not going to take the time to engineer sports car steering in their family cars, economy cars, etc., because I doubt their target customer/demographic (i.e. not you) would want or need it.

I'd go with "not want". If they gave family cars more responsive steering, I'd think they'd get comments like "twitchy" or "lacks stability".
