In the 1M Supplemental Owners Manual, page 17 (this is the US spec english version) it states that at normal operating temperature the engine oil will be between 100 C and 150 C.
In normal driving, mine usually stays right near 100-110C, but definitely goes up when driving the car hard. The highest I have seen was about 125 C, but I have not been to the track yet.
