I do not see how being low on coolant would make your car overheat. You have a bigger problem me thinks. IF you have access to a scan tool, check for waterpump failure codes. And besides when your car is low on coolant the BC will tell you that - and display a low coolant warning.
Did you ever see a yellow or red overheating icon? I would get your car checked out.
