Use a wire brush to clean them up and lightly apply some anti-seize compound. You may try painting them, but I don't think that it will hold up and if to thick it could cause a very tight fit.
Just go with 225/40F and 255/35R tires. I would try to keep the tire diameters the same. Those wider tires will fit the stock 7.5/8.5" rims ok, even though they are not ideal.
I am running Conti DWS all seasons in the above sizes on the stock rims and they fit and function fine. I want a better handling tire for weather other than winter so I am going with another set of wheels and summer performance tires. Starting fresh, I will get 8/9" wheel widths put on 225/40F and 255/35R tires. That is the ideal setup, although as I indicated the stock width wheels also work.
Bottom line is if you follow these recommendations, I think you will be pleased with the results.
