All oils advertised high temp viscosity is at 100°C, anywhere form there on and the oil becomes thinner, if the oil could be kept at 100°C all the time to me that wold be ideal but if you have the oil at 90°C for normal driving and then when thrashing the car it goes to the nominal 100°C that would be perfect. You should be able to ask full performance to the engine from 70-75°C without doing any harm as the oil in this range is a bit thicker and will take the abuse. With today's oils the advanced additive package do a good job to maintain protection beyond optimal fluid temps. The cooler to me is a good idea, I actually don't like my oil going past 120°, which by the way is still within very acceptable ranges.
