The camber plates will be able to get you way more than -.75 degrees.
If you want set-it-and-forget-it type camber plates, you don't need adjustable ones. You could get the Dinan camber plates for $200, which are also less likely to give you NVH issues in the long run.
You could do what I did... I already have camber plates (installed by the previous owner), so I didn't need the extra camber from the M3 bits. Instead of doing the full M3 control arm conversion, I just did the upper control arm bushings... so I get the steering feel of the M3 bits without having to spend money on extra camber that I don't really need.
Also - if you don't plan to adjust your coilovers, why not just get springs/shocks?
