I use 10W-60 so I need my car to be able to warm up as quickly as possible. Also I race in Wakefield sometimes during winter which does reach near freezing temps haha.

Definitely it's possible to just delete the thermostat, especially during warmer months and if running on 0W-30/40 but it's always better for the car to have one and warm up faster, than to warm up slower if there's a relatively cheap, available and easy to install option.
