Can't see much difference between the two. Distilled water picks up carbon dioxide from the air, so the pH can be a bit lower, but mixing it with the coolant lowers the solubility of the CO2 in water, and it will escape to the atmosphere. If you allow the demin water to sit around for a bit, it will also take up CO2 from the air. Quality of the demin water will depend on how the manufacturer looks after his deionizing columns or reverse osmosis membranes. That said, I use demin water from the supermarket in my lab. because it's cheaper than buying and running a lab demin unit.
