They can't throw you in jail if the car is registered in your name.
Also, you wouldn't start your car - go inside, leave your key and then go out. How would you get back home? The car won't restart out of that 10 second grace period, and you wouldn't be able to lock it.
You wouldn't do it by mistake, because as you get back into the car - there would be a warning "NO KEY"
