I assume you are planning a square setup, 8.5 fr and rear. If I went that way I'd for sure try to squeeze 235 tires in. If you are staggering then 225 would be smarter on your first set then if you seem to have enough space, try 235 next set.

Lot's of us without Breytons have 8.5 fronts with offsets around 40. It's a tight fit on both sides. You'd probably have to add camber plates if you went with a 10mm spacer. Good luck!
