SS Turbo Tuner/Re-flash/Performance Power Kit
There are obviously lots of options for increasing the performance, all with various levels of work and cost involved.
Re-flashes seem to be $1000+. Intakes, exhaust, etc. can go well into the thousands. No word on the Performance Power Kit yet. And there are things like the Split Second Turbo Tuner. I've also heard of another from Cobb (I think?). At only $500ish, virtually zero work involved...It sounds like it's too good to be true... what's the catch? And if there is no catch, why isn't everybody doing it?

Cobb is a flash tune, but with the ease of uninstall/reinstall at your leisure. Its about $900 but there are some salespeople here on the forum who can get you great deals. I'd suggest Sean@PySpeed. I am not advertising. This is just the same direction I chose.

I would be interested in something like that. The JB3 works really well, but a complete pain to put on and take off.

Going back to the OP, one of the "catches" in my opinion is that things like the Cobb and the JBs tunes tend get you a lot more power by doing things like adjusting the computer to run the turbo at higher levels of boost than what the car normally runs at.
I think, for the most part these products reliably bring out a hell of a lot of hp from the engines, but the catch is a possible reduction in reliability. I went the BMW performance power kit route for my car and it is certainly overly-priced, but given the fact that it doesn't void my extended warranty, I was okay with it. I think they're all pretty good mods, it just depends on what you're looking for.
