Advice on maps for N55 JB4

I have a 2011 135i and recently got a JB4, ER intercooler and charge pipe, BMS catless downpipes and custom downpipe back exhaust. To be honest the difference wasn't as big as I was expecting.

I got a baseline dyno and am going back for a post mod one, and I'll eventually get to the drag strip to see the difference there.

In the mean time I'm trying to figure out what map would be best to use. The shop said to just leave it on map 2, but a lot of people online seem to think map 5 is safer and just as effective after a giving time to adapt.

We don't have E85 readily available here. I always use 98 Ron petrol, but a new fuel just came out that's 100 Ron with 10% ethanol. Should I give this a go with map 5?

Any advice would be appreciated.
