Quick question... can you explain how the front sway reduces understeer? Is it because of the change in camber when the suspension is under load? In other words, the stiffer sway keeps the camber values negative?

It can reduce understeer in a way that it keep the body roll under better control, as a result there is less body roll induced positive camber change to the outside front tire. The better you can keep the outside front tire square to the road surface the more traction you will have.

Looking at your web site. It shows different sizes for the bars. Witch one is the best for an all around good car. Street/track?

If you have no other suspension mods, the E93 convertible bar is the best. If you have coiiovers with high spring rates, the smaller one could be all you need.
