Fly for ribs...nice! They do have epic ribs, i'm at the Bondi one nearly ever week and still can't get over the epicness of the taste. Addictive!

On another note, churescho joints are pretty damn good too. They mostly use salt and mustard but they usually cook the meat to perfection.

P.S i don't know how some of you guys have patience to slow cook certain meats.
I cook ribs every month or so and have narrowed this recipe down to the way I like it. Sort of tony roma style

Meat
Get a good rack of ribs from a butcher.
Remove membrane from the underside.
Put in a pot of boiling water for about an hour, or until the meat starts to pull off. (usually takes me 1h 15m).

Sauce
1 cup ketchup
1 cup white vinegar
1/2 cup golden syrup (CSR is best)
2 teaspoons sugar
1/2 teaspoon salt
1/4 teaspoon garlic powder
1/4 teaspoon onion powder
1/4 teaspoon Tabasco pepper sauce

put it in a pot and let it simmer for 45min -> 1h or until it thickens.

Once they are both done, take the ribs out and put them in a big dish and get a brush and really jam that sauce throughout the ribs. Then just pour the rest of the sauce over the top, cover the dish and put it in the fridge for 24 hours. I usually take them out every 6 hours and jam that sauce in there good again with the brush

Then, on high heat on the bbq cook for 5-10mins each side covering with chilli flakes and the left over sauce.

eat and enjoy.

I absolutely LOVE cooking too - growing up in a family whom are all foodies is probably why i'm into it. Its nice to appreciate and be aware of what you put inside your body. And did I mention chicks totally dig guys who can cook?

Im not so much of a Barbie man but I adore my Miele oven and grill... and Kitchen Aid mixer and Theromix is a must for any foodie.

BTW- Happy Birthday Rey!

I go to one next to woolworths on the corner of warton/amherst in southern river. They are the only ones I've tried that are good every single time I go there. I sometimes try coles/woolies or other random butchers when I see them but the meat is meh.

How can the quality of the ribs differ so much?

and I love to cook too. It's completely different to programming all day and the best thing is I get to eat it

That one is good, but the best churrasco is in coogee. I have only been once, was a bit of a trek but well worth it.

Same mob and same link. The meat tasted better there, not sure if they use better quality cuts or they have more experienced cooks. They are always busy.
