This is England we're talking about. The day after he picks up the car it is going to get driven down a filthy motorway in the pissing rain and be covered in mud, grit, grime, stone chips and cow dung.

I could understand doing this on a show vehicle, but certainly not on an M3 or similar. I'd stick with "wash, clay, polish and wax and call it a day."
Interestingly it is on my mod list - the only cosmetic one. I was complaining about it to the bmw body shop up here about my 135i, and he suggested the above.

At least on the Sunshine Coast you can keep it looking sweet! Orange peel doesn't bother me, though it's definitely there if you look for it.

Is 20 of 100 microns really anything to worry about?

... Um yes considering the average reading on a modern clear coat is anywhere from 150-190microns.

If you removing 20microns on clear while wetsanding than that person needs to learn how to wetsand.

I detail cars and I've seen great results from wet sanding cars to get rid of (most) orange peel. Jimmy Lucci did a write up on his CTS-V here
http://www.m3post.com/forums/showthread.php?t=632484 and a couple others i've seen in person, but i have never done it on any car since i would have to charge a leg and an arm for such job and would just recommend getting a proper repaint of the car instead (which would most likely be in the same price range).

Judging by their results, they appear to know how to wetsand.

Not to dismiss the amount of work that this requires and as nice as the final product looks, you should be aware that the result may not be what you want.

Many years ago I experimented with Zaino products. It too gives a spectacular shine. So much so that, from certain angles, my car panels looked like a mirror. Not as much as in the pics above, but close.
After the initial wow, I got tired of the look. I can't explain it... I had a black car, and the color just sort of... disappeared. After all, what color is a mirror? It takes the color of whatever it reflects.
For certain colors, especially dark ones like black and red, you want the deep, wet look.
I saw a black Mercedes the other day that had the wet deep look. It was awesome.
The reflective look is the opposite... shallow.

Just saying.
