JB4 Menu 11 throttle sensitivity

Can someone explain the benefits/drawbacks to Menu 11 and the throttle sensitivity for daily driving conditions?
I like the way 100 (5k) feels, but I drive the car as a DD 95% of the time.
Is it normal to see 10psi of boost with light pedal input?

Is fuel economy the same for DD conditions setting to 0 or 100? Does the constant boost under light pedal input with the 100 setting use more fuel for highway cruising?
