Does anyone know - as the accommodations are for 2, are 2 people also able to experience the track time? My wife may be along and she would enjoy some time behind the wheel. If so, would this cut into my time on the track?

You each get a turn. I think it was something like 10 tries per driver at each station. If your wife decided she did not want to drive, you could drive both runs at each station.
