Which system is louder?

Meisterschaft GT catback with no resonators or CP-E catback with no resonators.

i heard a CP-e in person that had the catted downpipes and full catback system with resonators, and it was LOUD!!!

which is louder?

Please remember that until an exhaust is fully broken in, it will be much louder than normal. The first 300-400 miles in my car with the cp-e turbo-back were quite loud, and I became a bit unsure whether I made the right choice with the exhaust. It finally quieted significantly after that period though.

If you do Dinan you better make sure that you would not void their warranty with a non-Dinan product like a mid-pipe. They do have some restriction to that when I talked to them orginally when I was deciding what tuner to go with.

I've actually had the opposite experience with two different exhaust systems.

I've found that after the break-in period, the exhaust tone will actually "smooth out". It's hard to describe, but it's as if the tone loses some of its aggressive elements (in a good way) but doesn't necessarily quiet down.

For example, my AE exhaust was pretty civil from the time it was installed, after about 500 miles the tone smoothed out considerably (to almost slightly louder than a large displacement stock exotic car) and now it's starting to get a bit louder in certain RPM ranges and certain conditions such as low load, light acceleration, etc. I'm loving it

This is just my experience... and it may even vary from exhaust to exhaust.

Yes you are correct. The actual dB's don't change much it's the tone that changes. The muffler packing that hardens from the heat + water and this mellows them out.
