My normal commutes are pretty short and I barely get the temperature over 80C / 175F but I had to refill the coolant from minimum yesterday and I just topped it up 2 weeks ago. It just got quite a bit colder here in Alberta, Canada but I didn't have any problems last year in the winter.
I have a 100K miles on the clock now and thought by the way the oil filter housing gaskets looked like, that there might be some other rubber gaskets that could get "eated" by the coolant.

I'll try to take detours from now on to ensure i get her up to a proper temperature and if it's not getting better in a few days I'll get an cylinder leakdown test done
