Don't fool yourself into thinking you know the car better than BMW. The people who design this stuff are very smart and you are 100 times more likely to have your ass saved by that stability control unit with full authority over your brakes than have it turn against you and kill you in what would be a pretty exceptional freak accident (or targeted act).
Besides, there's tons of other ways the car can kill you if electronics fail at the wrong time or someone puts malicious code somewhere. Run ABS pump (no brakes) kill power steering (after shutting down motor), kill power brakes, kill the motor, program transmission to downshift to first at 80mph on the highway. I'm sure that's just the tip of the iceberg, someone more creative than me can do better.
