Obviously it depends on the buyer and their goal for the car. However most of us would buy a car like that and probably feel a bit worried about driving it on the road.
Imagine you take out your perfect e30M and all the sudden you get rear ended at the stop light. Assuming everyone is ok, most of us would cringe at the loss... but if you have lots of cars and can afford car collecting as a hobby, maybe you dont care about that and therefore feel its worth driving. dont save it for the next guy...
