With Brembo 380mm you are limited to 19" wheels and there is no significant performance gains with the larger rotor size. What you should look for is rotor and its vane design, more vanes the better. AP has one of the best rotors out there.

Caliper stiffness also comes into play and its finish. If you track a lot, you want to avoid painted calipers as they will change color after a couple of heat cycles.
