It kinda depends on comfort and starting the car.
Obviously you have to depress the clutch pedal to start the car and if it doesn't go down far enough the engine won't start.
I started off with 2 but had to press really hard on the pedal to get the car to start so I dropped back to one and then added a second one after it flattened a bit. Some people use all 3. Completely up to you.
