I used Torque to create virtual gauges on a tablet. One was for water temperature. What I learned is my car runs hotter at a steady cruise than it does if I am accelerating. The software makes it run hotter so it will get slightly better gas mileage. When you accelerate hard, it runs the cooling system more so the engine doesn't get too hot. Kind of makes sense. Until you also realize that running hot takes usable life out of a lot of things on the engine. I think they don't put a temperature gauge on the car because they don' want people thinking something is wrong then they are running hot at a steady 60 mph cruise.
