You are overthinking things. Run the lighter wheels and have fun. I am not sure of the weight difference between your options, but my wife's street 19s are 9lb heavier a corner than her 17x9 Forgestar 255/40 RE71r track setup, and that weight difference completely transforms the car. Much more so than having slightly non-ideal widths would.
