You don't need a water temperature gauge. The oil temp will be about 15->20 degrees hotter than water; however, the oil reaches it max temp later than coolant. It also gives a better picture of the engine's operating environment. You don't want to operate the engine at full load until the oil is up to operating temperature.

Also note that the oil cooler use the engine's coolant to remove excess heat from the oil.
