Sounds like you need to find a different tire shop. The guy there clearly doesn't know what he's talking about. The first number in a tire size ex:245/35R19 is the width in mm so you're right that they'll be wider. The second number is the aspect ratio of the sidewall height to the width, so on in the example above 245x0.35=86mm sidewall height. Upsizing you tire width without changing the aspect ratio means that the new tires should actually be slightly taller than your old tires.
