It will probably work fine aesthetically but 10" is actually on the wider range for stock 265 tires. The recommended range by Michelin for the 285/30/19 is 9.5" to 10.5 inches. Going wider will give you the lowrider tire effect which might cause some funny things to happen. The diameter will shrink a bit as will the load carrying capacity because the sidewalls are less perpendicular as designed to operate. Again, not saying it will be horrible just want to make sure that you this combination is not really optimal from a design and performance perspective. See chart for 285 Michelin SS and recommended tire rim width range.
As far as offset goes, APEX sells 11" wide in 25 offset, same as stock. This would be the correct offset to maintain proper suspension geometry. You are adding 12.7 mm toward the inside of the wheel well and 12.7 mm toward the outside. My friend m3gator runs 285 with only slight rubbing but he is using 10" rim. I know a 10.5 will clear the fender because I added 5mm spacer to my rears and the extra 1/2" adds 6mm and there were 6mms left on the inside.
Anyway, I'll let others chime in and hopefully someone has actually done the 11" wide that can help but there is not much room for playing with offsets with 11" rim. That is so wide that you will either hit the fender or something on the inside. If you roll the fenders you could go with ET20 but not sure if that is worth it.
