I am a track junky, what do you guys think about 265/35/19 Square set up hoosiers?
I think beeing able to rotate is very important, but what about handling? Any issues with the tracción controls, etc?

Sure, that's easy. Yes you get a little rubbing on the liners up front but you'd have a ton of clearance in the rear. Also not as much stick as the 315. Because of the smaller size there would be more slip and the traction control would activate more.

I'll be going with 265/285 PSS on 18" rims. To those who have gone wide, especially as wide as 315(!), have you noticed MPGs go down, or increased road noise?
