Removing the Front Sway Bar for Drag Racing?

Has anyone done this? Did it make a difference?

Yes. It'll improve weight transfer and shave a little bit of weight off the front to boot.

I recall you did some drag suspension already, so I would think the difference would be even more noticeable with your springs/dampers you put in the back.

Generally worth .1 in the quarter. You don't have to completely remove it, just undo the end links.
